About Anna

Anna has always been a good helper. She can’t be given one task; you have to give her more. As soon as she is done, she is going to ask, “What’s my next job?” As soon as she finished that task, “What’s my next job?”  That would continue until she was forced to go out and play.

It started with her mother starting a chore chart when Anna was about three. Anna would get a star sticker on the day she helped set the table or some other chore. At the end of the week, the number of stars would determine the treat. Anna enjoyed putting up stickers, a sign of job completion, over the end of week prize. The prize was never implemented since Anna only cared about the stickers.

When she was four, Anna started helping with meals. Helping wasn’t a chore; it was a responsibility she enjoyed. She coveted new responsibilities and loved that the older she got, the more responsibilities she earned.

At first, Anna helped with easy tasks. Little responsibilities for a little girl. Now, 10-years-old, Anna makes full meals for the family by herself. Recently, her Cowgirl Chili came in third in a chili cook-off. She was the only child who entered. She also had the second spiciest. Anna made a chili that was for the judges, not for how she liked it.

Sharing cooking duties with her dad, Anna takes these responsibilities seriously. There are dishes she makes, dishes her dad can make and dishes anyone can make. If the family is going to eat Paella, Anna has to make it.

Now Anna wants to share her recipes and cooking tips with other people. She hopes that people will enjoy reading her website as she has making it.

Mini Peanut Butter Pancakes

Always good to have a new spin on things. Mini peanut butter pancakes are easy and kid friendly.


I like the mini peanut butter pancakes because they are fun and easy to make. Another thing I like about them is that they are so sweet that you don’t need syrup because the powdered sugar from the peanut butter dust makes them so sweet.

They are nice and small so you end up eating less overall than if you end up eating full size pancakes. We like to save the batter and make them again another time. Since they cook so quickly, you don’t have save this for the weekend. I make a couple before I go to school sometimes.

This idea was simple. We had peanut butter dust leftover from making a peanut butter pudding pie and my dad and I thought we could add a new spin to pancakes by adding the dust and making them mini.

Making them is simple. Just use your favorite pancake mix and pour a little on a lightly greased skillet. Sprinkle the peanut butter dust on top and wait until the bubble stop popping then flip.

To make peanut butter dust
Mix equal parts peanut butter and powdered sugar.
Continue to stir and mix until it turns into a fine dust.
Add more powdered sugar if needed.

Coke Glazed Ham Revisited

The diamnond cuts are not evident until cooking. But like the great flavor, it is there.

Last year, I posted my recipe for Coke Glazed Ham. This year, we (my daddy and I) made it again with a few changes. It gave it more flavor. Try these changes and you will love it.

First, we sliced a shallow diamond grid pattern into the outside. Then placed whole cloves in some of the intersections around the ham. After that, we poured the Coke on. We used the Mexican Coke from Costco because it uses sugarcane instead of corn syrup and that gives a better kind of sweet flavor. We covered in foil and placed it in a 350 degree oven.

One bottle is just right for a ham 10 pounds or more.

For the last 30 minutes or so, we took the foil off and basted the ham with the Coke and drippings. Before slicing, we took the out the cloves. We used the dripping and coke in the bottom of the pan for the gravy.

To make the gravy, mix a quarter cup of flour in a half cup of cold water and add to the coke and drippings liquid. Add salt and pepper to taste. I think that the coke gives it a sweet blast of flavor. You should really try it sometime. No need to wait until the holidays, you can try it anytime of year.

How to Use Leftover Holiday Ham

For Christmas we make a ham for dinner. And when you make a big holiday dinner, you end up with a lot of leftovers. Here is a way that you can get rid of all that leftover ham and it is delicious too.

We use the best looking slices for dinner and the other oddly shaped pieces or chunks near the bone are diced up and put in the freezer. That way we can just get a little bit each morning for our eggs. Better than it going bad and having to throw it away.

Philly Cheesesteak video

My daddy went to Philadelphia for a convention and enjoyed Philly cheesesteaks so he made them when he got home. The recipe is fast, easy and fun to make. I like the flavor that the cheezewhiz gives it. I had never had cheesewhiz before I had Philly cheesesteaks so my dad taught me how to make these. Now you can make them too.

Smokies in a Snuggie


This recipe is basically a pig in a blanket only bite sized. You can use any of the little smokies, I like the ones with cheese. I think it has more flavor. They are good with your favorite hotdog condiment.

This recipe is perfect as an appetizer for football games or friendly get togethers. They are easy to make, kid friendly and so delicious you will just eat them up. I like them because in every bite you get not only the crescent roll, but you get the little smokie. They are the perfect finger food, you can take them down in two bites.

Crab Bites

Every time Anna goes to Maureen's she makes something brand new. Anna had never made crab bites before that day. They were a big hit.


Crab bites are great for parties. If you are going to a dinner party or even the super bowl, crab bites are the perfect snack. They are delicious, bite sized and easy to make.

This recipe is based on an old family recipe Open Faced Crab Sandwiches. Instead of mayonnaise we used cream cheese, which makes them like crab ragoons, and instead of English Muffins, we used small pieces of bread. Crab ragoons are another good appetizer where you used wonton wrappers and fry them.

For a dinner party at Maureen’s I mixed the stuff at home and assembled it at the party. They are easy and quick to assemble. And only take about five minutes to cook under the broiler. For the original family recipe, use mayonnaise instead of cream cheese. Toast and butter English muffin halves and assemble as normal. They are bigger, and not party sized. More like lunch.

With holiday parties coming up, this is the perfect snack to bring. It is good for New Year’s, dinner parties and football games.

Chicken Pot, Chicken Pot, Chicken Pot Pockets

Two premade pie crusts make four perfect pockets.


If you want something that has the same texture and taste of chicken pot pie but has a higher crust to filling ratio, chicken pot pockets are perfect for you. They are easy to make and you kids will love them. Best of all, you can make the filling ahead of time.

For the crust, you can make it more of a project for you and make it on your own using any common pie crust recipe. Or you can buy premade crusts at the store. If you make your own crust, you can personalize each pocket as big or small as you want. A single, premade crust is perfect sized to make two pockets.

This same recipe can be used to make chicken pot pie in a regular pie tin. Or you can make personal pot pies in single cup ramekins. If you like a higher filling to crust ratio, just use a top crust for the ramekins. The filling can be made ahead of time and cooled. Then put in the crusts later. Pockets made ahead of time are good heated up in the oven. My dad likes to slide strips of cheddar cheese in the vents when reheating.

This is also a good way to get rid of turkey leftovers. After thanksgiving, make some turkey stock, freeze some leftovers and thaw out later when you are not sick of turkey.

Hole in One

Eating is always the best part. One piece of regualr French toast, one hole in one and the hole. Add sausage and some fruit and you have a complete breakfast.

A hole in one! Two foods in one. French toast and fried egg. Anna adds her usual seasonsings to the egg.

This is another recipe that we took to the next level. My mom learned how to make these from her friend’s dad. They called it egg in a pooka which means hole in Hawaiian. My dad and I thought to make them out of French Toast and make the name a golf term.

I like them because you get the mixed flavors. You get the egg and the French toast together. And they are fun and a little different. You get tired of making the same thing so we like to change it up.

All this recipe is making French toast and cutting a hole in the middle. We like to keep the hole on the side. This recipe will make about four or five pieces of toast. The bread should be lightly dunked. If they absorb too much egg mixture they will be really soggy and soft.

Homemade Syrup With Video

Have you ever wondered how to make homemade syrup? Well here is your answer. This recipe has only a couple ingredients and a few simple steps.

When my family was camping with friends, pancakes were made for breakfast and one of the families had homemade syrup. It was so good, and easy to make. My dad asked for the recipe and she gave it to us. We have been making it ever since.

One of the reasons why I like this recipe is because the mapleine you use in it costs about the same as one bottle of store bought syrup. My family hasn’t bought syrup since we received this recipe.

This is fast and easy to make. You might be surprised how quick this is, so don’t walk away when you are cooking.

Ingredients:
2 cups of sugar
1 cup water
1 teaspoon mapleine
1 teaspoon vanilla

Some people always measure, Anna like to eyeball it. Once you make it a few times, you can adjust how you like it. Playing around with recipes is part of the fun.


Bring water to a gentle boil
Add sugar and stir until dissolved and water is clear
Remove from heat
Add mapleine and vanilla
Let cool and put in container for storage
Eat, love and enjoy with a breakfast

You can adjust the flavors as you like. I don’t measure with measuring spoons anymore; I like to gauge using the cap.

The ratio of sugar to water is important and can’t be adjusted much. Too much water and the syrup is too thin, too much sugar and it will crystallize when cool. To fix that, just heat it up again and add some more water.

Chocolaty awesomeness

Who doesn’t like chocolate? Here are a couple of my favorite chocolaty treats to make. These are fast, easy, fun and can get messy.

There is a shop in which we get chocolate covered gummi bears. But it is so far away from my house and my mom really likes them. So my dad and I decided that we could make them at home ourselves. I mean, it is just two ingredients and now we can make chocolate covered gummi bears anytime my mom likes.

To make chocolate covered gummi bears you will need chocolate and some gummi bears. I like to use semi-sweet chocolate chips because they have a bit of a bitter bite that counters the gummi bear sweetness. Any chocolate can be used. You will need about ¼ cup of chocolate for one package of gummi bears.

Melt the chocolate in a microwave safe bowl or a double boiler, stirring often. Using a toothpick, cover the gummi bears in chocolate and put on wax paper. Then put in the fridge and the chocolate will harden in a few minutes. Then eat, love and enjoy the chocolaty awesomeness.

Homemade peanut butter cups are so easy to make I don’t know why people buy them at the store. And Plus, they are cheaper. This is just a few steps and very easy. This recipe came from my dad. He found a recipe, but thought there was an easier, better way to do them. We like this way better. We usually make them at the same time as the gummi bears, but my dad likes to use milk chocolate on them sometimes. You can buy the cups at a restaurant supply store like Cash & Carry. It is only a few dollars for 250 cups so they will last a while.

Start with melting chocolate in the microwave or in a double boiler. I like to use the microwave, but my dad prefers to use the double boiler. Spread a thin layer of chocolate in the cups and put in the refrigerator for about 5-10 minutes for the chocolate to harden.

Take a pair of kitchen shears and snip a notch in the cup. This will make them easier to peel. Next, spoon some peanut butter into a plastic bag and cut the corner. Pipe the peanut butter into the cups like bakers do with frosting, leaving just a little room on the top.

Then cover with a little more chocolate and back in the refrigerator. Once they are done, we put them in a plastic bag and store in the refrigerator until we are ready to eat them.

Since we are already melting chocolate, we do both chocolate covered gummi bears and peanut butter cups at the same time.

Baked Shrimp Alfredo

Baked Shrimp Alfredo is so easy, simple and fun to make. Plus while it is in the oven you can take care of other things such as side dishes or children. When you look at the recipe, you might think, “Wow, this looks a lot like fettuccini Alfredo.” But honestly, I think this recipe is better. I don’t know what it is; maybe it is the noodles, the texture or even the oven’s extra flavor.

My dad has a similar recipe, except it is made with a béchamel sauce. A béchamel sauce is one of the four mother sauces and is made with a white or blond roux and milk or cream. A roux is fat plus a thickening agent. For white or blond roux we use butter and flour. The white roux is cooked until it is beige and the blond roux is cooked until it is golden.

I like to use ritoni noodles for this dish but any short pasta noodles can be used. I suggest using something like twists or shells or something with a lot of surface area for the sauce to stick to.

For this dish, I use salad shrimp because it is easier to deal with than full size shrimp. Smaller shrimp is easier to eat with small pasta than full size shrimp.

Super nachos for a super football snack

Quick to fix, quick to cook and quick to eat super nachos are a favorite treat.


Football season is here and so here is a good gameday snack. People enjoy having snacks, but hate missing the game. With this recipe you won’t miss any plays making food. Like nacho bites, super nachos solve the problem of not getting all the flavors on each chip. This is even easier than nacho bites, but not as fun to eat.

I don’t know why we call them super nachos, this is what my dad calls them. He got the name from his family as one of their favorite Superbowl foods.

Super nachos are easy and flexible; you can put whatever you want in them. Best of all, you can make them ahead of time and just put them in the oven at kickoff. Instead of putting the layers on chips, you put it in a pie dish and each it with tortilla chips.

Start with a standard pie dish. Layer one can of refried beans evenly along the bottom.

Next, cover the beans with about a half pound of cooked and seasoned ground beef. (My dad and I cook in diced sautéed onions with the meat.)

Then layer shredded cheese over the meat.

After the base of refried beans, super nachos are easy to customize. Shredded chicken can be used instead of ground beef. What are your favorite nacho toppings?

Last add any additional toppings like sliced black olives or diced green onions.

Bake at 325 for about 20 minutes or until the cheese is melted.

Spoon onto a plate or bowl and eat with tortilla chips. Anything you like on nachos can be put on super nachos, just save the salsa and sour cream for after it is out of the oven.

Shhh, don’t tell them it is good for them

Sometimes it’s easy to get kids to eat their vegetables. Like ants on logs (celery with peanut butter and raisins) or melting cheese on broccoli to make “cheese trees”. But sometimes you got to get creative.

One snack you can make is mac and peas where you put peas in mac-n-cheese. This is a yummy snack or side dish your kids will love but they still get some of the veggies in there too. Something else you can do is add tuna for protein and Worcestershire sauce for flavor.

Another thing you can do is sneak carrots into various dishes. My tomato sauce calls for shredded carrots and recently I snuck them into my baked beans for a BBQ. Shredded carrots get soft in the cooking and no one notices the texture but they get the nutrients. The tomato sauce can be used for pastas or pizza, plenty of food kids like.

A main dish you can be sneaky with is meatloaf. You dice up onion and green pepper and no one notice. It’s really delicious and a good way to give your kids their vegetables and your kids won’t be able to resist the flavor.

Healthy lunches for healthy kids

Celery is a good addition for a healthy lunch snack. Just be careful when cutting.


Now that school is starting, kids need to have healthy lunches so that they can be focused and energized for the day. Whether they get a school lunch or pack their own here are some tips for kids to have a balanced meal at school. That means something from each food group.

When at school, kids should ask the person serving lunches what is the healthiest choice. Sometimes there are chicken nuggets, pizza or other foods kids like, but it is not the best choice to get. After getting the healthy lunch entrée option, there is usually a fruit or vegetable bar at school and kids should grab something every day from there.

I think that getting the regular milk is better than flavored milk because usually the flavored milk has artificial flavors or added sugar. The regular milk is a healthier option. In Jamie Oliver’s Food Revolution, he is pushing to have flavored milks removed from school because how unhealthy they are to growing bodies. Even before I saw the show, I always got the regular milk because I knew it was a healthier choice.

Even when kids pack their pen lunch, they can still get the milk from school. If not, parents should buy juice packs that have 100 percent juice in them. Reading labels is important because a lot of juices have artificial flavors or added sugar.
When kids are packing their own lunches, they should start off by packing their sandwich. A healthy sandwich can be packed with protein with either peanut butter or meat. You should be cautious about possible food allergies of other kids at school so make sure you are aware of classmate allergies.

A sandwich will have multiple food groups in it. It starts with a good bread like whole wheat. Here is where reading labels is important because some breads are better than others. If you have meat, add cheese and lettuce and there are all four food groups in one.

Having vegetables in the lunch is also a good idea. What I like to do is have cucumbers or carrots in my lunch and sometimes celery. I like to fill little container with salad dressing or peanut butter for dipping in my lunch. But don’t forget to wash them out as soon as you get home.

For Anna, Jamie Oliver's Food Revolution is more of a food status quo. She already had healthy habits.

Fruit is a good option too. Apples, grapes, bananas or grapes are a good addition to any lunch. When it comes to fruits and vegetables you have a lot of healthy choices.
Kids like to go overboard on snacks or treats for their lunch so you should hide the really good treats or prepackage them so kids can just grab one pack and put it in their lunch. When buying snacks in bulk, have kids measure out one serving to limit how much they take for lunch.

Healthy eating habits are good, but we should still enjoy being kids. From time to time it is okay to have a treat and have chicken nuggets or chocolate milk for lunch. Just not the pizza for breakfast they serve at school. That is no way to start the day.

A healthy day starts with a healthy breakfast. To be prepared for the entire day, kids need to be energized and focused. That starts with a well balanced breakfast. You know what they say, Breakfast is the most important meal of the day. A good breakfast and lunch leads to healthy kids.
